The Artistry & Facts of Gourmet Coffee...
Espresso Like A True Barista
Tips to making fantastic espresso:
- Use a pump-powered machine (avoid steam or lever-based machines). For best results, at least 18 atmospheres of pressure are needed to emulsify the oils and dissolve the gasses and make perfect Créma.
- Grind to a very fine grind with a quality burr grinder, either one that's built into the machine or a stand-alone. A very fine grind is needed to get a dense pack for espresso for that strong intense flavor. A slightly coarser grind is needed for Créma to allow more water to pass through faster to get the frothy layer that floats on top.
- Either a manual or built-in pre-infusion function that tamps and pre-soaks the grounds prior to brewing helps extract the most flavor from the grounds.
- The best is an espresso machine that uses continuous steam and hot water output to eliminate waiting when making cappuccino, latte or Americano style coffees.
- Be sure to keep the filter and other parts clean or the crud will spoil the taste.
- Use decalcifying and manufacturer recommended cleaning supplies.
- Although some have built in water filters, be sure to use great tasting water.
